Damascus VG-10 steel is the benchmark steel for premium Japanese cutlery. VG-10 stands for "V Gold 10" — a high-carbon Japanese alloy known for its exceptional hardness (60-62 HRC), corrosion resistance, and ability to maintain a razor-sharp edge for months. The 67 Damascus layers give it its unique visual pattern and superior strength.

What is the difference between a MIYABEC knife and a supermarket knife?

A supermarket knife is generally made of low-end stainless steel at 52-54 HRC — it dulls in a few weeks. A MIYABEC knife made of Damascus VG-10 steel at 60-62 HRC retains its sharpness for 3 to 6 months with daily use. This is the difference between a disposable tool and an investment that lasts for years.

What is a Kiritsuke knife?

Is the MIYABEC knife made in Japan?

Our knives are forged using traditional Japanese techniques with high-quality Damascus VG-10 steel. MIYABEC is a Quebec brand — we select, test, and ship our knives from Quebec to guarantee you service in French and fast delivery.

Why does my blade have a golden tint after cutting onions?

This is completely normal! This golden patina is the natural reaction of high-carbon steel in contact with acidic foods. It is actually proof of the quality of your Damascus VG-10 steel. A simple wash with soapy water is enough to restore the shine of your blade.

Can I put my MIYABEC knife in the dishwasher?

No. The dishwasher irremediably damages Damascus steel and the resin handle. Always wash by hand with warm water and mild soap, then dry immediately.

For Quebec and Canada: 3 to 7 business days. We ship via Canada Post or Purolator depending on your region.

How often should I sharpen my knife?

With daily use, plan for a full sharpening every 3 to 6 months thanks to the exceptional hardness of 60-62 HRC. Use a 1000/6000 grit sharpening stone at a 9°-12° angle on each side.

What cutting board should I use my MIYABEC knife on?

Use a wooden or soft plastic board. Absolutely avoid glass, ceramic, or granite boards — they destroy the edge of your blade in a few uses.

Can I cut bones with my MIYABEC knife?

No. Your MIYABEC Kiritsuke knife is a precision tool designed for fine cutting. To cut bones, use a cleaver or a boning knife. Forcing on bones can chip the blade.
